Ann's Recipes



ANN’S CORN CASSEROLE:

1 package Mexican Cornbread Mix

1 15 oz can Crème corn

1 15 0z can Whole kernel corn

3 eggs

2/3 cup vegetable oil

1 onion

1 ½ cup grated cheddar cheese

2 green chili peppers – chopped (optional)

Directions:

Mix all ingredients and put into a large glass greased casserole dish and spry with cooking oil. Put casserole into a preheated 350 degrees oven. Bake for 45 to 55 minutes until golden brown. Serve hot or cold.


ANN’S TACO SALAD:

1 head lettuce

½ cup grated cheese

1 medium chopped onion

1 10-oz can stew tomatoes

1 lb ground beef (cooked)

1 can taco sauce

1 6-oz package regular corn chips

Salt and pepper to taste

2 tablespoons oil

Directions:

Preheat a nonstick frying pan - the pan is the correct temperature when a drop of water dances on its surface rather than sticking to it. Crumble hamburger into skillet salt to taste and cook for 7-8 minutes stirring until completely cooked. When done let cool then combine with remaining ingredients.


ANN’S SALMON CROQUETTES:

1 can salmon clean all dark meat & bone away

1 egg

1 ½ teaspoon minced onion

¼ teaspoon salt

1 can mixed vegetable, drained

¾ cup cracker crumbs

¼ cup butter

½ teaspoon basil

Directions:

Mix salmon, egg, onion, salt and vegetables and put in a well greased muffin pan. Mix crumbs, butter, and basil then sprinkle on top then bake 15 to 20 minutes at 375 degrees F.


ANN’S GREEN BEAN CASSEROLE:

3 cups green beans, cooked and drained

1 ½ cups mushroom soup

½ cup canned dried onion

Directions:

Pour into 1 quart baking dish and bake at 350 degrees F for 25 minutes. Sprinkle onion of top.


ANN’S HERSEY BAR PIE:

1 large Cool Whip

2 teaspoons instant coffee, dissolved in 1 tablespoon water

5 Hershey bars with almonds or 1 large bar melted

1 graham cracker crust

Directions:

Mix all ingredients together then pour into graham cracker crust. Chill and serve.

ANN’S MILLIONAIRE PIE:

1 can condense milk

1 large Cool Whip

1 large can crushed pineapple, drained

2 tablespoons lemon juice

1 cup chopped pecans

2 graham cracker crusts

Directions:

Combine all ingredients and put into 2 graham cracker crusts then chill and serve.


ANN’S DELUXE HAWAIIAN PIE:

1 cup sugar

1 cup corn syrup

1 ½ cup coconut

3 eggs, beaten

2 bananas, mashed

1 can crushed pineapple

1 teaspoon vanilla

4 tablespoons self-rising flour

2/3 cup melted butter

Pinch nutmeg – sprinkle on top of pie

2 small or 1 large unbaked pie crusts

Directions:

Combine all the ingredients then pour into pie crust and bake at 300 degrees F for 45 minutes.



HAMBURGER ROAST:

1 lb hamburger in roll

1 small onion, finely chopped

4 medium sized boiled potatoes

1 medium size can tomato juice

1 teaspoon salt or to taste

1 tablespoon pepper or to taste

2 tablespoons Heinz 57 sauce or to taste

2 tablespoon olive oil

Directions:

Preheat oven to 400°. Spray a baking pan with a cooking spray. And carefully remove ground beef from the container so it doesn't fall apart and place it in the prepared pan, keeping it in the same form in which it was packaged. Using a fork, loosen it some. Brush with the olive oil. Cook until brown about 10-15 minutes then remove from oven and sprinkle onion on top and place boiled potatoes around the meat. Mix tomato juice, salt, pepper, and Heinz 57 then pour over the meat and potatoes.

Bake until juices are no longer pink, basting every 15 minutes. It will take about 30 to 40 minutes. Don't overcook.

When done, remove from oven and let stand 15 minutes before cutting into it. Remove it to a serving platter and surround it with the veggies. The meat will have a firmer texture than meatloaf and can be sliced as you would a roast. Spoon some of the juices over it after slicing.
